Walnut Fig Loaf

One morning after an exercise class, a good friend suggested "Keith, why don't you make a Fig and Walnut loaf", to which I replied "Ok sure." One can never be certain from whence inspiration arises, so best to follow through when presented.

For my Walnut and Fig loaf, I felt a whole wheat dough would be a good pairing with the stars of this loaf. I hand-broke the shelled walnuts in half and roasted them gently under a watchful eye. Meanwhile, I rough-chopped about 80 grams of dried black figs and then placed them in warm water to rehydrate for about 10 minutes. Because the figs are dried, I did not want them to soak up too much moisture from my dough.

The resulting loaf was mildly nutty flavored with the occasional sweet morsel from the figs. This bread makes an excellent toast and also pairs well with both savory and sweet toppings.


Shortly after I made this bread, a dear cousin of mine sent me a package containing two bags of delicious North Carolina pecans. Pecans are one of my favorite nuts and so I imagined an even more flavorful loaf with pecans and figs and sesame seeds. Stay tuned for this new loaf. —Keith Stewart 01/15/2022

Valerie  Is it possible to bake this bread without using a Dutch oven? I do not have one, but I would love to try this bread. It looks delicious. Thank you.
Hi Valerie. Thank you for your comments. Yes, you can bake this without a Ducth Oven. The process is a little more involved. If you click on the Recipe link, at the bottom of the recipe is a description of how to bake the bread without a Dutch Oven...Keith
