Sweet Potato Quinoa Pumpkin Seed Loaf

I am a big fan of sweet potato and I enjoy an occasional departure from routine pure wheat breads in terms of flavor and texture. I modified this recipe from an Online baker to more suite my tastes and healthy nutritional profile.

I added 3 tablespoons of raw pumpkin seeds and 1-2 tablespoons of black organic quinoa. Aside from the black, orange and green colors, I love the nuttiness that these grains/seeds bring to the earthy sweet potato. To prepare the raw seeds, I dry-roast the pumpkin seeds on a medium heat stove for about 2 minutes and then add in the quinoa to the pumpkin seeds and roast another 2 minutes or so then remove and allow the seeds to cool.

For the sweet potato, I previously baked 2 medium sweet potatoes uncovered. I let the sweet potatoes cool then removed the skin and mashed with a wire whisk until creamy smooth. I have tried this recipe with steamed sweet potatoes and I feel that the baking process really brings out a more intense and complex flavor in the sweet potato.


I blend in all the ingredients, allow for an overnight proof and then dutch-oven bake this bread. The result is a very moist, slightly sweet, flavorful bread that is great for both sweet and savory toppings. This bread also makes a lovely toast. —Keith Stewart 11/09/2021
