Sesame Seed Whole Wheat Loaf

I really love the nutty taste of roasted sesame seeds and so I decided to make a rather simple whole wheat loaf of black and white sesame seeds. To begin, I lightly stove-top toast 1 tablespoon each of un-hulled raw black sesame seeds and un-hulled raw white sesame seeds. I prefer to use un-hulled sesame seeds because I feel they have a little more flavor-presence and chewability than hulled sesame seeds.


Once my roasted seeds have cooled, I combine them with my dry flour and mix thoroughly to distribute all the seeds. To notch up the flavor just a little for my bread, I add a heaping tablespoon of buckwheat flour to my mix. My resulting bread has a lovely sesame flavor, a crispy crust, and a hint of color from the buckwheat.

This sesame loaf is versatile for for both savory and sweet toppings and makes a great thick-sliced sandwich bread. I find that when its sliced and toasted, the sesame flavor really pops.—Keith Stewart 12/17/2021
