Sesame & Pumpkin Seed Loaf
As many of my friends know, I am a huge fan of both sesame seeds and pumpkin seeds. Hence, I wanted to combine these two favorites into a loaf so I could enjoy these together. I created a loaf with about 88% organic white bread flour and about 12% organic whole wheat flour. The result was a rather fluffy loaf with a delightful nutty & seedy flavor and a pleasent crunch. I think the extra fluff puff was a result of creating a slightly higher hydration bread than I normally bake. Previously, I would weigh my flours and water to achive my hydration % and then add my seeds. As you can see from most of my seeded breads, I tend to be generous with seeds and nuts. My generosity therefor resulted in a noticably lower hydation rate. Thenceforth, I now weigh all my dry incredients to more closely reach my 80% hydration rate.

To really let my pumpkin and sesame seeds shine, I stove-top roasted them for a few minutes, starting with the pumpkin seeds first then adding the sesame seeds a minute or so after the pumpkin seeds. I use organic unhulled sesame seeds which take a little longer to roast than hulled seeds. I also used black sesame seeds so its important to use your sense of smell to check when these are done. Dont let them start smoking or you may have roasted them past their prime. If you are roasting with pumpkin seeds, if you hear the pumpkin seeds start to pop, its time to remove from the stove.
